This Columbian micro-lot is from small producers from rural areas of Caldas and personally processed Juan Felipe Aristizábal at his wet mill. This is a special process where the cherries were moved to sealed tanks for the maceration then left in the tanks to ferment for 24 hours. This creates highly nuanced and complex flavors of banana, caramel, strawberries and lemon lime. The heavy body, medium acid and flavor profile score very high and is a tribute to what Colombian coffee can be and definitely not anything like you find on grocery store shelves.
